White Bean Blondies

1/3 cup vegetable oil
420g cannellini beans, rinsed and drained
1 1/4 cup dark brown sugar
3 eggs
1/2 tsp baking powder
1 tsp vanilla extract
150g white chocolate chocolate, chopped

Put the oil, beans, sugar, eggs, baking powder and vanilla into a blender and blend until smooth. Add the white chocolate and pulse for 2-3 seconds. Pour into a dish lined with silicone baking sheet. Bake at 180 degrees centigrade for 40 minutes.



I adapted this recipe from the kidney bean brownie recipe. The bottom turned out a little wet and sticky. I think I should've replaced the cocoa with some flour to help stiffen the mix. I scraped all the sticky bits up and ate it with some plain yoghurt. It tasted like a syrup pudding.
