Courgette Cake

1 1/2 cup plain flour
1 cup dark brown sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
280g courgette, coarsely grated
1/3 cup vegetable oil
2 eggs, lightly beaten
1 tsp vanilla extract

Place oil, eggs and vanilla into a large bowl. Stir in the sugar and courgette. Sieve in the flour, baking powder, cinnamon and salt. Gently fold together but do not over-mix. Transfer to a dish, 20x35cm, lined with silicone baking sheet. Bake in a oven preheated to 180 degrees for 35-45 minutes, until a toothpick inserted comes out clean.
