Ham and Pea Soup

1 kg smoked gammon
500g yellow split peas
3 onions, chopped
4 carrots, chopped
4 sticks celery, chopped
2 bay leaves
3 litres boiling water

Put everything into a pan, bring to the boil and simmer for about 2 hours until the split peas are very soft. Take out the gammon and cut into bitesized pieces. Allow the soup to cool slightly, blend half in batches and return to the pan, add the gammon and heat through.
