Red Cabbage Salad

1/4 small red cabbage, shredded
1 small red onion, sliced
1 lemon, juiced
Glug of olive oil
Handful of pumpkin seeds
Salt, to taste

Combine the cabbage and onion in a bowl. Add the lemon juice and olive oil. Season with salt and mix well. Sprinkle the pumpkin seeds on top.
